Savory Peas

3 medium leeks (white part only)
10 slices bacon, chopped
1 medium red bell pepper, julienned
2 pkg (10 oz each) frozen peas, thawed
1/4 cup chopped parsley
1 teaspoon kosher salt
1/4 teaspoon pepper

Wash leeks; cut crosswise into thin slices and set aside.
In 3 quart pan saute bacon until crisp. Remove bacon and set aside.
To drippings in pan add leeks and red pepper saute until tender (about 12 minutes).
Stir in peas, salt and pepper and half the parsley
Cook until heated through.
Spoon into serving dish and garnish with bacon and parsely.
